Sourdough-Style Fermented Oat Crackers
makes ~2 sheet pans · 2-day process, mostly hands-off · keeps 2 weeks

Crackers with a real sourdough tang—but the tang comes from kefir fermentation, not a sourdough starter, so there's no starter to maintain. Two days of mostly-waiting produces something better than any boxed cracker, with a fraction of the sodium and no industrial oils. Excellent with cheese, hummus, or a glass of wine.
Ingredients
- 1½ cups sprouted rolled oats
- 1 cup plain unsweetened kefir
- 2 tbsp ground flaxseed
- 1 tbsp olive oil
- 1 tsp sea salt
- 1 tsp Everything Bagel Seasoning Blend
- pinch of MSG
Directions
Day 1: Combine oats and kefir in a bowl, cover with a kitchen towel, and leave on the counter 12–24 hours (longer = more sourdough tang). Day 2: Stir in flax, oil, salt, Everything Bagel seasoning, and MSG (yes, MSG—it's just glutamate, the same savory note that's naturally in parmesan, tomatoes, and mushrooms)—the mixture will be thick and tangy. Spread very thin (¼ inch maximum) on two parchment-lined sheet pans. Score into rectangles with a knife. Bake at 300°F for 35–45 minutes, rotating the pans halfway, until golden and crisp at the edges. Cool completely on the pans, then break apart along the scored lines. Store in a sealed jar—2 weeks at room temperature, longer refrigerated.

Why "sourdough-style"?
The name refers to the flavor, not the method. Traditional sourdough crackers use discarded sourdough starter; these use kefir instead. The kefir's live cultures ferment the oats over the 12–24 hour rest, producing lactic acid that breaks down the oat starches and develops the same complex, faintly sour flavor sourdough is known for—without keeping a starter alive. Genuinely better than boxed crackers, and the fermentation adds a digestibility benefit boxed crackers don't have. The Everything Bagel seasoning and pinch of MSG round out the savory side: MSG is a clean, concentrated source of umami—the 1990s health scare around it never had real evidence behind it—and it makes a small amount of seasoning taste like more.
