Makes 8 bars

A coconut-coated evening snack bar on a wooden surface
Ingredients

Wet

  • ⅓ cup date paste (Date Lady Organic or homemade—less than the others)
  • 1 tbsp almond butter
  • ¼ tsp vanilla extract

Dry

  • ¾ cup sprouted rolled oats (One Degree Organic)
  • 1 scoop TGS whey protein (25g)
  • 1 tbsp pumpkin seeds (Yupik Organic raw pepitas)
  • 1 tbsp chia seeds
  • 1 tbsp unsweetened shredded coconut (Terrasoul or Bob's Red Mill)
  • ½ tsp cinnamon
  • Pinch sea salt

Mix-Ins

  • 1 tbsp Pascha 85% Organic dark chocolate chips
Directions
  1. Warm the date paste and almond butter together in the microwave—20 seconds at power 7. Once smooth, stir in the vanilla.
  2. Combine oats, whey protein, pumpkin seeds, chia seeds, shredded coconut, cinnamon, and salt in a large bowl.
  3. Add the warm date-paste, almond butter, and vanilla mixture.
  4. Mix until dough holds together—it will be drier and more crumbly than the other two bars (intentionally).
  5. Fold in Pascha 85% dark chocolate chips last.
  6. Press into parchment-lined 8×8 pan.
  7. Refrigerate 2 hours minimum.
  8. Cut into 8 bars.
  9. Roll in finely shredded coconut.
  10. Gives a light, dry exterior that pairs naturally with the cacao and pumpkin.

Why this works at night: The pumpkin seeds provide magnesium and tryptophan, both of which support sleep onset. Chia seeds add fiber that slows absorption, extending the "something to eat" window without much in the way of calories. The Pascha 85% dark chocolate chips deliver the chocolate ritual with concentrated polyphenols and minimal sugar—the date paste, cinnamon, and vanilla provide enough sweetness to balance the bitterness. At 155 calories, this replaces a 300+ calorie bowl of buttered popcorn and still satisfies the hand-to-mouth ritual. Pair with chamomile or herbal tea—the warm-and-cold combination extends the snacking duration.
